Title: Mrs. Wiley's Watermelon Rind > Mayberry

3lbWatermelon rind
3lbSugar
1ptVinegar whole cloves (small handful)
3 4 sticks cinnamon
1tbWhole allspice

Peel the green outer rind from the watermelon rind. Some, but very little, pink should be left. In a saucepan cover with cold water and bring to a boil. Reduce the heat and simmer until the rind is tender enough to pierce easily with a fork. While the rind is cooking, combine the remaining ingredients and cook until the rind is done. Drain the rind and soak in cold water, pouring off the water and replacing it several times. When cool, drain and cover with ice cubes. After the rind is thoroughly chilled, combine the rind and the syrup in a large saucepan and bring to a boil. Reduce the heat and simmer for 45 minutes. Put in jars while still hot. The spices can be put in the jars with the rind.
